This vineyard, 5 km away from the Mediterranean Sea, grows on a sea floor formed by fragments of shells of bivalve molluscs and gastropods, which, together with calcareous cement, bring to the wine mineral and earthy notes with a fresh acidity. After a selection in the cellar and a soft pressing, the must passed its alcoholic fermentation process in stainless steel tanks at a temperature no higher than 24º C. Later the lees were decanted and again in stainless steal tanks to perform a malolactic fermentation during 40 days.
Pale yellow and bright, the nose shows intensely the expression of the Mediterranean clay soil, with notes of very subtle white flowers. Mineral and saline accords at the end of the mouth that come together to give rise to warm sensations. After a while the ripe fruit with hints of peach and ripe apricot is glimpsed. In the mouth the malolactic fermentation wraps the previous feelings with a mellow and fatty touch. PETIT SAURI white is defined as a white wine for aperitif, a calm wine that needs to be tasted with tranquility.
